Great knife, but a little too big
Elegant, ergonomically sound and sharp. As an ordinary home cook, it is more of a luxury item than a sound investment, but I love it. The only issue is that because of the Japanese-style connection between the handle and blade, the knife is longer that German-style 8" by an inch or so and a bit too large for me. In hindsight, I should have bought the 7".

Learn how to use this blade
Once I learned how to hold the knife, it is my go to blade.Seemed too long at first then I read that it’s held differently from a French chef’s knife.Looked it up on YouTube.It’s very sharp, very well balanced and is a pleasure to use.Makes me feel like morimoto and talk like him maybe not cook like him, get his cook book.For the price I highly recommend it.

This knife is so amazing. We run a charter boat and are cooking three meals a day for large groups. Well worth it!

Sharp!
I have a professionally sharpened set of Cold steel knifes and this thing makes them look like butter knives. The ONLY reason this doesn't have a 5 star rating is because it doesn't come with a sheath.

Awesomeness, but Inexperienced chefs, remember the band-aids.
Wow, some things are sharp, and this thing is SHARP .Like scary sharp. I consider myself a somewhat advanced amateur chef, and this thing scared the s&it out of me. Once you get the western cutting style out of your head, it cuts like supermans eye lasers. I merely threatened a tritip with it, and the meat promptly sliced itself.

Extremely Sharp
Extremely sharpe edge and good looking and feeling knife. After 2 months of use, the blade is still like new. Buy the edge guard to protect the blade as ot is very thin though. I purchased it and it was a good call for when its stored in the drawer.
