Q: Is any wheat used in making the anchovy sauce?

The label on the doenjang jar lists 5 ingredients, "soybean, anchovy sauce, water, salt and rice." For the allergen warning it reads, "Contains Soy." So, there is nothing indicated on the label that there is any wheat in this doenjang. The label on my bottle of Wangshin Fish Sauce ingredient list reads, "Anchovies, salt." Assuming that they use their own fish sauce to make their doenjang, my guess is that the doenjang is wheat-free. To be sure, you might want to ask the manufacturer via their website: www.wangshin.com

No wheat. The ingredients are soybean, anchovy sauce, water, salt and rice.

Q: What are you supposed to do with the small packet inside the jar?

It appears to be some sort of preservative. I throw mine away and use the paste as a condiment on Bulgogi when wrapping some rice, bulgolgi meat, kimchi, garlic clove (Roasted) and red bean paste rolled up in a lettuce leaf.
